The popular Mexican cuisine restaurant lands in a new location

A longtime popular Mexican restaurant now has a new location in town.

Formerly located at 270 Dahlia St. in Pahrump, Rubalcaba’s opened about 18 years ago as a taco shop.

The family business is now operational as Rubalcaba Mexican Restaurant at 1500 Red Butte St., corner of Mt. Charleston Drive.

On his first day in business this week, owner Jesus Rubalcaba explained why the family decided to change location.

“Fortunately, we were lucky enough to be able to buy this property instead of just renting it, because we had been renting for 18 years,” Rubalcaba said. “We are finally lucky enough to be able to move to this new location.”

Rubalcaba also talked about the restaurant’s prime location, as it’s squarely in a residential neighborhood and close to Pahrump Valley High School.

He noted that zoning was not a big issue.

“It didn’t have to be difficult and more than anything, we wanted to give the city a new place to come visit, come eat, come hang out,” he said. “We really want to make it not just a restaurant, but a place where people want to come hang out with us.”

It is not easy

As a former golf course, Rubalcaba spoke of the challenges of turning the property into a restaurant while noting that while the task was difficult, he is grateful to have accomplished the endeavor.

A very difficult aspect of relocating his business is the fact that last July’s historic storm devastated many of the trees lining the property which were downed by wind gusts exceeding 75 miles per hour.

Rubalcaba said he plans to move the business just before the storm hits.

The timing, he noted, created unforeseen delays as at least 11 adult trees had to be sawed off before removal.

“It was actually a coincidence because the storm happened the day after we got the keys,” he recalls. “It affected us a lot because it set us back a lot and it was a huge mess, but luckily everything worked out.”

Spacious interior

The new location also has additional amenities, including a spacious dining room, a soon-to-open bar, and a section for parties and private gatherings.

The breakfast, lunch and dinner menu is available all day, while the opening hours are currently 07:00 to 21:00.

Aside from this week’s “pre-opening,” the family plans to hold a grand opening in the not-too-distant future.

The dream becomes reality

On a final note, Rubalcaba’s backstory could easily be seen as the fulfillment of the “American dream,” while paying homage to its customers.

“Honestly, we’re grateful to Pahrump because Pahrump was the real reason we were able to do this,” he said. “Now we really want to give back to the community and have a great place for everyone to come and hang out. We just really want to reiterate that we’re grateful for all the support because we wouldn’t be able to do this without you. So we really want to thank everyone.
