Description: Classic Fried Chicken. First, it’s brined with seasonal salt and chilled overnight, then hand-breaded in savory homemade breading, then fried until perfectly crispy in a Dutch oven with salt. canola oil.

1 cup seasoning salt, 8 pieces of fresh chicken (2 breasts, 2 thighs, 2 thighs, 2 wings), 1 gallon canola oil

2 cups all-purpose flour

2/3 tsp salt

½ teaspoon of thyme

½ teaspoon basil

1/3 tsp oregano

1 teaspoon celery salt

1 teaspoon black pepper

1 teaspoon dry mustard

4 tsp paprika

2 teaspoons garlic salt

1 teaspoon ground ginger

3 tsp white pepper

1) Rinse the chicken. Place in a large mixing bowl or Tupperware. Coat with seasoning salt. Fill the rest of the container with ice and then water. Refrigerate for 12-24 hours to brine the chicken, which will add flavor and break down the meat to make it more tender.

2) Heat the canola oil to 350 degrees using a candy thermometer and a 5 quart (or larger) dutch oven.

3) Mix the breading ingredients. Move the chicken directly from the brine to the breading so that it is thoroughly moist. Bread the chicken well. Knock the pieces together to shake off the excess batter. Place them in the grease and set a timer for 12 minutes.

4) Remove the chicken from the fat and place it on a cooling rack to cool so the breading doesn’t get soggy.

Tip: Bread your chicken while it’s moist, be sure to shake off excess flour, and always set a timer!
